Ripe rhubarb is blended up. Nothing more, nothing less. Fresh elderberries and strawberries are harvested and squeezed to extract the juice. Some moisture is gently removed to make the good parts easier to ship and we mix in the missing water at our facility. 

Local Nebraska honey is incorporated to accompany the sugar in supplying sweetness while also providing a delicate flavor. We handle it gently to preserve the natural mineral content built in by the hard work of the honey bees. Using local honey also supports the pollination here in the Midwest to further support Mother Nature.

After peeling, we squeeze the ginger to coax out the sharp and delightful juice. Ground cinnamon is gently roasted to provide long lasting earthiness and warm flavor.

Sugar is nature's most simple sweetener and we use granulated organic sugar from cane. Glucose syrup is used to provide body to the snacks and also provides some sweetness. It can come from a variety of starchy plants such as corn, rice, or in our case, Organic Tapioca.

Together, pectin and gelatin form a delectable texture with just the right amount of give and bounce. Pectin is extracted from fruits such as apples and citrus and provides Norma's it's firm "jam-like" bite. Gelatin is composed of collagen peptides and provides the bouncy chew.

Sodium citrate and citric acid work together to provide just the right acid balance, or pH, for the pectin to gel up at the right time. The sodium citrate buffer keeps everything from jamming up before becoming our bee-shaped snacks and the citric acid makes sure that it does in fact set up like Grandma's jam and gives it a tart kiss.

The majority of Norma's flavor comes from juice and cinnamon. We add a teeny tiny amount of flavor extracted from nature (particularly from elderberries and strawberries) to help our juices keep their oomph! The strawberry rhubarb snack has a smidge of color derived from vegetable juices like beets and carrots to enhance our bees' beauty.

We like to think of these as nature's sparkle and give our bees their shine.
